George Burgess wasn't going to be a gin distiller. Born in Melbourne and raised in northwestern Tasmania, Burgess dropped out of school early and spent most of his youth in libraries and museums instead of classrooms. Upon returning to formal education–studying chemistry at Tafe–Burgess worked through a series of positions in brewing, milk and biotech industries.
